I usually start with basics, understand each element of the subject matter, how each elements work and provide examples and mechanisms on how to identify the problem, finding a way to solve it and check if it's correct.

From basic math to advance math, this includes topics on algebra, Trigonometry, geometry, calculus, etc.
I always point out the improvements first and the areas for further improvement, then the pain points and the observation on how they learn systematically.

I do not give a load of take home assignments since it will take up time for rest of students, I usually do the assessment on the lecture itself by giving end of lecture questions, which serves as a waypoint before proceeding.
I always make sure that the student is comfortable with the teaching style, the student must form confidence and understanding rather than more questions.
